I call this “cheater” vegetable soup because it's ridiculously easy and quick to make and also because it uses frozen vegetables and pantry staples you have on hand. I always keep staples on hand to make this soup, as it’s a family favorite. It can be doctored up, made vegetarian (vegan) or with meat.
This will be for the basic recipe here. Feel free to cook ground beef with the onion, or to toss in some chicken, etc.
1 medium onion, chopped
1-2 cloves of garlic, chopped
1 bag frozen mixed vegetables
1 14.5 oz can diced (or petite diced) tomatoes. We like Italian Style, but you can use plain
1 28 oz. can crushed tomatoes
1 32 oz carton (4 cups) vegetable broth (or chicken or beef broth)
2 tsp. Italian seasoning
1 handful of Orzo pasta
chopped fresh spinach (optional)
salt and pepper to taste
Grated parmesan cheese (optional)
Set Instant pot to Saute mode and let it get hot.
Add olive oil to the pot and sauté onion, until translucent and begins to caramelize.
Add garlic and stir for about 15 seconds. You just want to cook it a little, as garlic can burn quickly.
Add frozen mixed vegetables, diced tomatoes, crushed tomatoes broth, Italian seasoning, pasta and spinach. You can add additional broth or a little water if you want a different consistency or if you’ve tossed in additional veggies.
Place lid on instant pot and seal. Turn Instant Pot to Manual mode and set for 5 minutes.
You can use Quick Release or Natural Release.
Salt and pepper to taste, if you like. This is great with some fresh parmesan cheese sprinkled on it.
This recipe keeps and freezes really well. We always make extra for lunches or to put in the freezer.
